Mick Stoltenberg is in his second season with the Coyotes in 2020 following a four-year career at the University of Nebraska in Lincoln. Stoltenberg is a quality control coach for USD and assists with game preparation.

Stoltenberg played in 41 games for the Huskers from 2014-18, totaling 69 tackles including 3.5 sacks. He was named a team captain as a senior in 2018 after starting all 12 games as a junior the year before.

Stoltenberg hails from Gretna, Nebraska. He earned a degree in management in 2017, and a master's degree in education admistration from Nebraska in 2019.
